It’s the best time of year to use fresh corn to make maque choux. I made it with pork. I can’t find crawfish anywhere.
Fail, part 2. Maybe it was the coconut sweetened condensed milk. I used the egg yolks this time.

I had all of the regular ingredients, so I thought I’d go ahead and make the real version. This will firm up nicely.
