Some award winning chocolate makers go above and beyond by even pressing their own cacao butter so that they never use a generic bland cacao butter that most producers use.

Some producers focus on the bean source from their own country. Marou only uses cacao from Vietnam and Fu Wan uses cacao grown in Taiwan. Did you know cacao from different regions have different terroir? Like wine grapes?

If the producer can tell you the exact farm that cacao is from, like this Pump Street Ecuador bar, then it’s most likely a craft bean to bar chocolate.
