Add the air dried tomatoes and mushrooms The juice of a couple of lemons and some anchovies Chuck the lemons husks in.. they can come out later Gently cook till soft and mushy At some point add vinegar enough to make it sloppy and sugar, to taste Take off the heat and go to Aldis
DAY2 Drain the salty veg’ and rinse well Pour the oil and spice mix uno a big pan and put on the ring When hot add the drained veg and cool slowly till softening Find some old bottles and wash them
Ok. I’ve not forgotten Toms have had 3 hours.. all that flavour is concentrated .. and a bit of caramelisation It took about 3 hours and I poured off some of the liquid , that will go into tonight’s dinner This is a great way to pack in the flavour Now do the same with mushrooms
