About 1/3 of the Hatch green chiles that I'm roasting and prepping today. Mild, Medium, and Hot. Not sure of the specific variety but I'd guess Heritage for the mild, Big Jim for the medium (on the right in the pic), and Sandia for the hot (left). Green chile bacon cheeseburgers for dinner!
