Very proud of my creations today! The port took about 13 hours to cook since the fat wouldn't render but still came out VERY good. Made and smoked a peach cobbler as well for the first time too!

15-16 hour cook for a brisket!! Turned out pretty good but I did slightly over cook it.

This weekend's meal is pulled pork (again), deviled eggs, and smoked cream cheese!! Decided to go with the lettuce wrap idea for the pulled pork and it is amazing!!
I bring you all smoked pork ribs . They are the best I have cooked so far!
this week's smoking has brought us pork belly! sliced due to the fact it would eat the burnt ends too quickly! next week ends the trilogy with pork ribs!
