A Chinese gang sends drugs to the UK. British drug dealers sell the drugs for cash. British drug dealers give the cash to Chinese students. Chinese students buy luxury goods from Bicester Village. Chinese students ship the goods back to China, where they're sold and the money given to the drug dealers. Bullough estimates that the Bicester trade is worth £2 billion a year, just from tourists arriving by train. This kind of activity is an issue for the whole luxury market. Bullough asks a police contact about luxury watches, which are a notoriously effective way of moving monetary value. I reckon the luxury watch trade is 8o per cent money laundering. Why wouldn't it be? You can carry a huge, big bag of money and be very noticeable, or have the same value strapped to your wrist, and be completely anonymous.' All this is invisible to the modern AML apparatus, which is focused on money that moves through the official financial system.

Pork Loin Braised in Milk,
Bolognese Style
IF AMONG the tens of thousands of dishes that constitute the recorded repertory of Italian regional cooking, one were to choose just a handful that most clearly express the genius of the cuisine, this one would be among them. Aside from a minimal amount of fat required to brown the meat, it has only two components, a loin of pork and milk. As they slowly cook together, they are transformed: The pork acquires a delicacy of texture and flavor that lead some to mistake it for veal, and the milk disappears to be replaced by clusters of delicious, nut-brown sauce.
For 6 servings
1 tablespoon butter
2 tablespoons vegetable oil
2½ pounds pork rib roast (see
note below)
Salt
Black pepper, ground fresh from the mill
2%½ cups, or more, whole milk
Note The cut of meat specified above includes the rib bones to which the pork's loin is attached. Have the butcher detach the meat in one piece from the ribs and split the ribs into two or three parts. By having had the loin boned, you can brown it more thoroughly, and by cooking it along with the bones, the roast benefits from the substantial contribution of flavor the bones make.
Another cut of pork that is well suited to this dish is the boneless roll of muscle at the base of the neck, sometimes known as Boston butt. There is a layer of fat in the center of the butt that runs the length of the muscle. It makes this cut very juicy and tasty, but when you carve it later, the slices tend to break apart where the meat adjoins the fat. If you don't think this would be a problem, you ought to consider using the butt because of its excellent flavor and juiciness. Should you do so, substitute 2 pounds of it in one piece for the 2½-pound rib roast.

-0.968 to - 0.014, P = 0.044) for the weight
concept and greater than zero (95% CI: 0.245
to 0.697, P < 0.001), indicating that participants were significantly more likely than by chance to perceive the tone with lower acceleration as heavier and clearer.
Together, these findings demonstrate that even subtle differences in key acceleration at the escapement point can systematically influence timbre perception in expert listeners.

I found a study from last year that answers this question of piano key movements and timbral differences. Interesting charts, too tired to read in depth now, but they identify four variables that alter timbral perceptions of “weight, clarity and brightness” in experts and non expert listeners

touch has been debated (1, 2, 13). While previous studies demonstrated that acoustic noises from the finger-key contact and key-bed collision influence timbre perception in piano tone production (12, 13), this study provides the first empirical evidence linking nuanced manipulation of key movements to perceived timoral changes in piano performance. The observed timbral
variations were associated with only a subset of key movements, including the key descending velocity and acceleration at escapement, the temporal relationships between the keypresses, and the intermanual synchronicity of movements.
This demonstrates that dexterous movement
control in pianists underlies the production of perceptual qualities of weight, clarity, and brightness in tones. In contrast to previous studies that have focused on the relationship between basic auditory perception (e.g.,
loudness, tempo) and corresponding

Chicago and the lead author of the study describing the new species. "I'd never seen anything like it."
The research team at the Research Station
in Galápagos preserved the octopus's body in alcohol and formalin, and they sent the specimen from the Galápagos Islands to Chicago for Voight to examine at the Field Museum. The little octopus was indeed one-of-a-kind, which posed a challenge for scientific research.

Tepache and Alua
Tepache is a Mexican soft drink, historically made from corn, but in its contemporary manifestation usually made from fruit. Aluá is the name for a very similar group of lightly fermented beverages enjoyed in northeastern Brazil. Making these is essentially the same as starting a fruit-infused wine-sugar water plus fruit, as detailed in chapter 4—only it is fermented more briefly. "Various fruits such as pineapple, apple and orange are used," reports the UN Food and Agriculture Organization on tepache. "The pulp and juice of the fruit are allowed to ferment for one or two days in water wit! some added brown sugar. ... After a day or two, the tepache is a sweet and refreshing beverage. If fermentation is allowed to proceed longer, it turns into an alcoholic beverage and later into vinegar."" One popular flavor of bot! tepache and aluá is pineapple, made by simply mixing pineapple peels in sugar water. Mix sugar water to taste, using sugar as little refined as you can find, or honey or other sweeteners. In tropical heat, 24 hours of fermentation typically suffices; in cooler temperatures, fermentation will take several days. Evaluate by tasting. After a brief fermentation it is bubbly and light; a few more days and it gets more alcoholic; a few more and it starts to be very vinegary.
Karen Hurtubise of North Carolina has a raspberry farm and makes a raspberry soft drink exactly this way, which her kids call "raspbubble." Karen dissolves 1 cup/250 ml of honey in 3 quart/liters of water and adds a quart/ liter of fresh raspberries. She ferments the mix for about three days before transferring to the refrigerator. She says her kids prefer it to commercial soda.
Typically, tepache is prepared as a wild fermentation without any starter beyond the raw fruit. Sometimes granules called tibicos or tibis are used, the same or functionally similar to water kefir grains (see Water Kefir).

I need a nap

Pain usually shrinks the brain's "body map," the region that directs which muscles move and when. That shrinking makes pain feel worse over time. Non-musicians in the experiment followed this pattern after researchers induced temporary hand pain.
Musicians, on the other hand, didn't. Their maps stayed intact, and the more hours they had trained, the less pain they reported feeling.
"Musicians, even before the pain was induced, already had a more refined hand map in their brains," the researchers wrote in the study. "After pain induction, their maps did not shrink like those of non-musicians, and the more hours they had practiced, the less pain they felt."
