Photo of the pot with a layer of large daikon chunks covering the cooking surface. I had previously skimmed the fat from the corned beef liquid and diced a daikon. I now reheated the fat, used it to heat up some minced garlic and then sweat down the daikon chunks.

I deglazed the pot with some shaoxing cooking wine, added a hefty amount of kimchi, and the strained corned beef liquid. I let it all cook together for a half hour. Partway through I put a small plate in the pot to weigh down the floating daikon and kimchi. The soup formed a nice consistency from the collagen of the corned beef, the spice and umami level were great. I needed to mince or dice the daikon smaller, some of it was still bitter. To plate, I rinsed the noodles again, added a good handful to each bowl, the now-dry tofu, and sesame seeds (which I ought to have saved til the end.

Photo of a small baking sheet with tofu cubes. I started by dicing tofu and boiling it (undrained) in salted water for about five minutes. Strained it out and let it sit uncrowded to sweat out.

I don't know enough about soba water to have saved it, but I rinsed the noodles in cold water to stop the cooking and get rid of the starchy layer that can form. I should have done it immediately, will be quicker next time.

My 爸 is visiting so I decided to try a culinary experiment. I had the braising liquid from the last couple of corned beefs my wife made, a jar of kimchi, and a dream.
