I have a DVD copy of They Were Eleven that I got from Rightstuff many years ago after reading the Buried Treasure column on @animenewsnetwork.com. Loved the premise and the commentary on gender. Definitely due for a rewatch. Hopefully it gets an HD re-release or a remake with lavish visuals someday.

As you suspected, the first two will be upscales, but Japan will be getting them on 4k UHD Blu-ray in December. The third movie seems to be a proper master according to this source at least.
I’m betting its the Amazon dub as that seemed to be more involved line with what studio Khara wanted. The back of the box does mention it is a GKIDS release as you suspected.
