Another not-really-obscure npc I love is Sassy Hardwrench. She's with you from the very start of Kezan, makes it through the entire ordeal with you, and ends up with her own gig in Stranglethorn, and is in Undermine for a fun reunion with her, along with reassurance that Gallywix is dead.
They're hardly obscure but I love Marius Felbane and Tehd Shoemaker so much. Iconic duo that I hope eventually show up again.
