Here you go. It's adapted from a YouTube video by Joshua Weissman who usually includes some unnessecarily expensive/hard-to-get ingredients. Still tastes great, and you it produces about 3-4 servings so it's awesome for meal prep too.

Ingredients:
Egg Noodles
Scallions (minced)
Chicken Thighs
Garlic (minced)
Soy Sauce
Hoisin Sauce
Olive Oil
Celery (chopped to bits)
Green Onions (chopped to bits)
Carrots (thinly sliced)
Cabbage (thinly sliced)

Prep:

Add 2.5 tablespoons of soy sauce, 2 tablespoons of hoison sauce to a bowl.
Boil noodles, leave to cool in colander.

Chop scallions and garlic.

De-Skin Chicken Thighs and cut into chunks.

Fry chicken skin in the pan, until it yields a flavourful chicken oil. Add to your mixture of sauces. keep the crispy skin as a snack.

Cooking:
Fry chicken thigh chunks until browned, with some nice char. Set them aside.

Add scallions to the wok and 3/4 of the garlic, fry until they are beginning to brown.

Add carrots, cabbage, green onions and celery. Fry until they are beginning to char.

Re-add your chicken. Stir fry for a minute on medium-high.

Add the noodles, fry for a minute, then add the sauce.

Stir fry until coated. Add 2 tablespoons of water to re-hydrate, stir-fry until the noodles look glazed.

Take the wok off the heat, add the remaining minced garlic. Stir until well-combined. Serve.
