Finally perfected the Spanish omelette flip. Some things I learned: -Some recipes call for "waxy" smaller potatoes but Russet Burbanks work fine- just chop them nicely with a mandoline -It's crucial to have the fried potato and onion to sit in the whisked egg for 10-15 minutes

I made Nigerian style jollof rice but had too much, so I took an Indian recipe for baked rice crackers (blended rice mixed with sesame seeds rolled on a cookie sheet and baked). Remarkable depth of flavor.

You can really get a good "first rise" by having no-knead bread sit in the Instant Pot on the "yogurt" setting for an hour. It made the daylong New York Times no-knead recipe take just under three hours.

I saw this ridiculous picture of Hindu nationalists wishing Trump a happy birthday and I realized that the one dude on the right is dressed like Fred from Scooby Doo.
