I would love to see the recipe. I pick up joints and knuckle bones from the butcher and just cook and concentrate the broth down until it's syrup like and gels easily. I don't add salt or seasonings until I actually use it. This is the last batch I made just before I poured it out to gel up.
I have been studying Charles Babbage and his difference and analytical engines and it has put me in mind to re-read this book. One of my favorite collaborations by two of my favorite Authors. 😊

Bacon actually 😋 I have been making bacon from pork belly for a few years now.
I have to say that, despite the cold, it's beautiful to look at the snow sparkling in the sunlight.

Our butcher sells beef tallow in mason jars and I use it for cooking sometimes.
I missed my typical post this morning. So good evening? It's always evening somewhere I guess. Having a Vegan guest tonight so I went all out cooking today! Not often I cook strictly Vegan. On the menu.. Aloo Samosa Chana masala Rice pudding (made with coconut milk)
I just counted the rings on the tree the arborist fell a week ago. 62 years old! It's a shame it had to come down, but it was too close to the house and we get a lot of high winds here. 🫤 If it had come down there's a good chance it would have destroyed either my house or the neighbors.
