Thai-style olive pork with accompaniments

Saw a sardine sandwich on Reddit and decided I needed to copy it, but unfortunately the pickled green tomatoes I had were *very* sweet. The mayo was smoky and fishy since I made it from the oil of a smoked mackerel tin. Mayo, crystal, sardines, pickled green tomatoes.
