I never know if people from Jackson see my posts on this app, but I’ll be sharing updates over the next couple of weeks about swag sales for my St. Paddy’s Day krewe. We’re excited about our interpretation for a kind of m’eh parade theme this year, and we are raising $ for the Children’s Hospital.
I made smoked chicken wings with a spicy adobo rub for the superb owl party I went to because I was cheering for Puerto Rico and we all won.

She’s on a speaking tour. She’ll be in my city next week. If you didn’t vote for her but demand to see her maybe go buy a ticket or at least the book. I fail to understand what she owes anyone at this point.
Merry Christmas! I’m continuing a somewhat new tradition (for me) this year of making guava cream cheese pastelitos to snack for breakfast and dessert. The first couple of times I baked them I tried making them cute but then a friend told me I could roll the puff pastry like a cigar. Simple and yum.
Earlier this month our vet told us she found a new sister for our dog. This little was wandering the streets of South Jackson and was kind of a mess. The amazing people at our vet clinic fixed her up and now she’s home with us. I’m so happy to have her in the family ♥️

I have been on a journey this week making tasso. Took a pretty nice looking boneless pork butt and cured it for three days, covered it in dry rub, and smoked it for a few hours. I can’t wait to add it to my maque choux tomorrow. Cajun cooking is the most American cuisine IMHO.
I don’t know where to buy tasso for my thanksgiving maque choux so I’m making it?! It seems pretty straightforward but this is my first effort at curing. Will report back.

A few months ago a friend of mine asked if she could set up a beehive on my lot because her colony was reproducing so fast. I enthusiastically said yes and it’s been a joy to have them hanging in the garden all summer. Yesterday we got our first honey! Doing stuff with nature is so cool.
