And done! The e-jen 이젠 container will have the fermented and the mason jar will have the fresh. I wanted to compare and see if I like the fresh vs. fermented. 맛있어요!

It always amazes me how wilted the cabbage gets making kimchi.

On the left, the sauce for the kimchi in a bowl, which has glutinous porridge, onion, ginger, fish sauce, salted shrimp, garlic, radish, and green onions. In the middle is the container I’ll put it in to ferment, and on the left is the cabbage in the middle of being salted, which is now half the size it was at start.

My life has changed thanks to bibim-naengmyeon 비빔냉면 (cold spicy noodles). It’s so refreshing and spicy. I love it, especially now that the weather is getting warmer and I want ramen without dying of heat. 😭
