Look what I found for the garden!

New cookbook! With a recipe specially for @hpsvanessa.bsky.social which is a whole lot less effort than the last one.

The cover for a cookbook titled "Use it all - the Cornersmith guide to a more sustainable kitchen" by Alex Elliott-Howery and Jaimee Edwards. It has pictures of foods which are often wasted, such as leafy greens, celery leaves, citrus rinds, pineapple skin, and carrot tops.

Pineapple skin syrup.
There is so much flavour in pineapple skin that it would be a crime to throw it away. Make this syrup and add pineapple flavour wherever you drizzle it. At Cornersmith we drizzle it over our whole pineapple cake (page 82), fruit salads and ice cream, and use it in marinades, salad dressings and cocktails.
Place washed and roughly chopped pineapple skin (along with the core if you haven't eaten it) in a saucepan with 2 cups water (500ml), 1 cup caster sugar (220g), 1 star anise, 4 allspice berries, 2 cloves and 1/4 teaspoon black peppercorns. Set over low heat and simmer for 15-20 minutes, then strain. If you want a thicker syrup, place it back on the heat and reduce further. Pour the syrup into a clean jar or bottle and store in the fridge for up to 1 month.
Makes about 350ml (12 fl oz)

While looking for cucumber ideas, I came across this recipe in the CWA cookbook. Pineapple honey, AND it uses the waste bits of the pineapple. \o/

ingredients: peelings and core of a pineapple, water, and sugar
method: Put peelings and cores in a saucepan and use enough water to cover them. Boil for about 20 minutes.
When soft, strain the juice and add 1 cup sugar to each cup of liquid. Boil again until the mixture is the thickness and colour of golden honey. But take care, as it passes the ideal stage very quickly. Test when a pale colour.

When you forget to harvest a zucchini for a few days.

A steroidally large zucchini, starting normal size at the blossom end and getting ridiculously swole towards the stem. Normal cherry tomato and chef's knife for comparison.
