I also try to paint in the background before I do highlights otherwise it’s hard to discern my lightest values. These are mostly done in two sessions. I try to avoid relying on just white to lighten colours as it tends to result in a painting that is too chalky eg
In terms of process, it’s mainly roughly out the areas of lights and darks in raw umber to use as an underdrawing, then blocking out the colors and refining details. I try to mix a lot of a “mother” color for the middle skin tone and then add whatever I need of each primary to adjust temperature
