AHA I found a bit that's not spoilery that I can use for wip wednesday! some ferdibert arguing hitting a little too close to home, as is bound to happen when they're this fucked up about each other. yes this is all happening while hubert is struggling to move furniture. no, I will not elaborate.
the stacks closest to me are the ones I get to bring home! they freeze super well, individually wrap em up then grab however many you want at a time and heat up and mmmmm
accidentally made some of them too big so my batch of dough is making less than 4 dozen but she's gonna be so soft and fluffy when she's done

so I revamped the strawberry cake by making it three layers of cake instead of two and went harder on decorating and then since I had leftover custard I made tarts with a bit of leftover jam in the base as well #nuantabakes
I cannot be stopped but sometimes perhaps I should be apple cinnamon scones with homemade caramel sauce for partner and roommate's saturday night mtg buddies who I am meeting for the first time but also this allowed me to use up the rest of the heavy cream I had leftover from the cake #nuantabakes
then I decided the top was two one-tone with both the coulis and the raspberries so I scraped the bowl as best I could to salvage a little bit of ganache and behold! the finished product
few little mishaps in the decorating process: - didn't have enough ganache to make it all look nice, but didn't have chocolate to make more - thought I would do a nice swirl with the coulis on top and it gooped up immediately so I pivoted - if I had known I would have done the raspberry circle first
while that's chilling in the fridge, I used even more raspberries to make a coulis. straining it was such a slow process but look how gorgeous that color is! and the extra mush with the seeds will be good to eat with yogurt or to put in a smoothie or something
thread for my attempt at making a chocolate mousse cake, but deviating from the recipe and improvising incorporating raspberry as well #nuantabakes first up: layers of chocolate cake, chocolate mousse for filling and crumb coat, and homemade raspberry jam for filling
but then I ran out of pastry cream, but I did have 100 mL of whipping cream leftover from other things and so eyeballed some powdered sugar and made whipped cream to fill the rest of my shells both versions tasted really good!! but the pastry cream version is definitely better imo
like any normal person would, I decided I'd make eclairs for the first time ever to use up my extra pastry cream (which I made to use up the extra egg yolks I had from making the cake) piping into them is hard...eventually gave up and sandwiched them instead #nuantabakes
For the filling, I used the pureed strawberries to make a jam, and since I had a bunch of leftover egg yolks, I also made crème patissière to put in there. The frosting was made from whipped cream and cream cheese, and I was able to streak a bit of leftover jam in there for the piping on top.
The cakes actually looked pale pink when they were mixed/done baking, but the color sadly disappeared not long after. At least I have photo evidence.
First I pureed strawberries and collected the juices, reduced the juices down, mixed with milk, and used that as liquid for the cake batter. The cake also only used egg whites.
