Before I moved to Ireland, a dozen years or so ago, I lived in ignorance, unaware that there is more than one kind of potato. Now I live in a world of potato-riches, and have strong opinions on which is the right potato for each situation: Roosters, Kerrs Pink, Golden Wonders, Queens, etc etc
