Gruyere wheel just after a flip. #cheese This is the most anxiety inducing parts of cheesemaking. It smells old and moldy but that is just the rind. Is it okay inside? We don't know. I'll probably open next month.

Pumpkin chocolate cheesecake. Made with fresh pumpkin and clover organic cream cheese. Chocolate graham cracker crust.
First pumpkin done, now doing the rest. I'm using a wonder grinder for the puree, not sure if I need to strain it as it feels really smooth.
