And TADA! The final product! Approximately 160 gallons of maple sap frozen down to 125 gallons of reduced sap boiled down to three and three quarters gallon maple syrup. Ah, beauty
Day Three continued the boil and we slowly added 10 more five gallon buckets of reduced maple sap. When we woke there was no snow and at 2:30pm, it dumped lol We kept going until 9:30pm until it reached a final boil (212° at our elevation) and then "finished" it and canned at 218°
Day Two we started building a fire at 11am and ran the boil all day, slowly pouring 11 five gallon buckets of reduced maple sap into the pan on the arch. My phone died before dark but we ran it all night
Day One we spent processing branches and logs so we would have enough fuel for the next day. We then gathered sap off the trees! You can see some of the taps here. We let the buckets/five gallon plastic buckets (not pictured) freeze partway and then remove the ice which leaves partially reduced sap
But right now? It's snowing. And all of that is why we call it Sprinter
We spent yesterday sprinting around gathering, processing, and stacking firewood so we can boil sap again tomorrow
I call this time of year on the farm "Sprinter." Everything starts clicking. Our cranberry, blueberry and black raspberry wine had to be bottled. My kefir grains had babies. Our ducks and geese kicked up the laying, and we had extra maple sap so we decided to make more wine. Plus all the sugaring.
My wife and I are sugaring which entails me sitting inches from a 7-800 degree fire shoving wood in and processing branches as she breaks up tree fall and chops dried wood. I feel like my arms are gonna fall off. Then I behold the wonder of maple syrup and think yeah ok. Let's do it again in a week
In other news...one of geese has started laying eggs!!!! And the mature and the young ducks are laying too! The smallest egg (from the first time layers) is called a "fairy egg" 😭😭

My wife made us a very spicy green chile with four different kinds of peppers. We came up with the name Four Alarm Fire Chile and she requested a label with a pig on fire. Ask and ye shall receive!
My personal favorite is what I call "jack-be-pickles" Pickled tiny jack-be-little pumpkins 🎃 lol They're great on cheese plates or a sandwich
Then I grew to love pickles so much I learned how to make my own. Now my wife gets limitless pickles! LET YOUR PARTNER CHANGE! You just might end up with more pickles than you'd ever dreamed of

My wife left me pot brownies and a couch-based "scavenger" hunt that basically amounts to eating snacks and drinking drinks all day so I don't go the Broken Bachelor route and just not eat and feel sick all day. I love her so much. How is she this cute???? This is gonna be such a good day off.

I "proposed" to my wife that we renew our vows, finally getting her the engagement ring she deserved 10 years ago. We renewed them under a white pine and she wore the dress she always wanted. Nice to finally get it right and show her the love and care she deserves 💚

We made fresh pressed apple cider for the first time and I GET IT! It's really delicious. Nobody loves apples as much as this dog though!
It's fall, you say? Well, I guess so because we are pressing 28 lbs of apples into cider (then fermemting some into hard cider, then apple cider vinegar) and hanging the last set of herbs to dry Witch, please!
