Sweden's national day! And as is tradition for me and the lion, I made Swedish meatballs with chive infused mashed potatoes, swedish cream sauce and lingonberry jam. 🇸🇪🐯

It's my lion's birthday today! And thus, he needs cake. It's a chocolate layer cake. One layer has cookies and creme mousse, one has a strawberry and rhubarb compote with fresh banana. Covered in cream and decorated with grapes, strawberries, kitkat balls and flags :D
Today at the cafe for socially vulnerable I volunteer at, I showed pictures and talked about what I had experienced, and some fun anecdotes about Japan. I also treated them to little treats I found on the trip. One of them was Azuki beans which I served on smol pancakes. It was well recieved :D
I help host a cooking club every other tuesday at the café for socially vulnerable I volunteer at. Today we made Tonkatsu inspired by my recent trip to Japan. Crispy pork, tonkatsu sauce, perfect rice, cabbage and edamame tossed in soy.
I'm seriously wanting to up my Japanese cooking game after my recent visit and so I got a proper rice cooker for that perfect rice. And while in Japan I got these onigiri shapers, and a good rice scoop. And today when I got the rice cooker, my first thing I did was these spicy tuna mayo onigiris!

Two good things made into one! A tiramisu cheesecake! Ladyfinger and pistachio crust, coffee cream cheese mix and topped with whipped mascarpone and amaretto! (Of course dusted with cocoa powder)
Hola España! Today I made Fideua! Now what's fideua you might ask? It's reminiscent of a paella, except it's made with a specific pasta in stead of rice. This one's made with chicken and prawns. Topped with lemon wedges and fresh parsley. Was awesome!
Salssicia (italian sausage) stuffed pork tenderloin wrapped in prosciutto, green tomato pesto risotto and a breaded and fried slice of aubergine! Parsley for colour o.o;
