another good thing to do is to always test with simulated lag and at different timescales & make sure your first person controller can handle spikes or slow motion without the input going wild (which i just clamp with a "MaxDegreesPerFrame" parameter in the aim script)

also idk if it's possible to solve steps perfectly but ive figured out a pretty solid approach, which is to snap the player up them, but make sure the camera follows smoothly
