My sweet potato homefries recipe. It doesn’t give measurements, but it gives vibes, like all good recipes did from the dawn of time until 1950. For white potatoes, just cook longer. They become fragrant long before they become tender, while sweet potatoes take much less time.

Cube sweet potatoes into pieces about the size of the last joint of your (my) thumb, a size that you could easily fit two pieces in your mouth.
In a large bowl, salt liberally, and paprika, garlic powder, onion powder, toss with a fork to coat.
Add cornstarch. Toss with a fork to coat.
Transfer into a hand sieve and toss to remove the excess. The remaining pieces should be covered in the cornstarch like pieces of Turkish Delight.
Add oil and butter to a high-walled frying pan in a ratio of about 10:1. If using salted butter, adjust the amount of salt added to the potatoes. You want enough fat to shallow pan-fry the potatoes, but not so much you have to drain them. Add the

much you have to drain them. Add the potatoes over medium-high heat in a single layer. The fat should slightly more than cover the bottom of the pan. Add butter as necessary. Cover with a fry screen or vented lid.
When the potatoes become fragrant, turn with a spatula. Sweet potatoes will soften faster than white potatoes.
If there's extra fat? You can use it to cook eggs. Add additional fat as needed.

People keep telling @itswilwheaton stories on here so I'll join, mine is silly. Many years ago at GenCon Iwas waiting in a line to get something and as I was waiting someone dropped something on my foot.
They quickly picked it up and kept moving. I made a comment to my friend about it being rude that they didn't apologize and he looked to see that it was in fact Wil Wheaton. I made a big deal out of it (as a joke) and it has been a running joke for the last 14ish years among my friends 1/2
