I finally finished it!! I #crochet 🧶this blanket over the past couple of years. The edgework has needed finishing for almost 8 months lol. But it is done and beautiful. Made with amazing yarn from @isasaxonists.bsky.social Republic of Yarnia. The yarn is amazing and beautiful

Then I made another dense bean salad. This one is Mexican Corn inspired I gather. I've made this one before, never the same twice, but freaking amazing. Note I've found the dense bean salads while you can eat them right away, overnight in the fridge even better

Mexican Street Corn Style Dense Bean Salad

Ready in 40 minutes
Serves 8 people
approximately 400 calories per serving

Ingredients
Corn: 1 bag frozen or 1.5 cans, optionally charred (you could totally use fresh too)
White beans: 1 can, (like navy or great northern)
Black beans 1 can,
Black olives 1 can -Sliced
Red Bell Pepper: 1/2 to 1 pepper,
diced Red onion: 1/4 diced or 1 scallion
Cherry Tomato - 10-12 diced
1 medium cucumber diced
Green onions: 4 stalks piece sliced
Cilantro: 1/2 bunch (use your judgement)
Pearl Mozzarella cheese (add more or less to your preference)
Imitation crab meat chopped 8 oz
Dressing Ingredients
1/4 cup lite mayo or greek yogurt
Juice from 2 limes
Smoked Paprika 1 tbsp
Chili Flakes 1 tbsp
Salt 3 finger pinch
2 minced garlic cloves
1 tbsp of water to thin if needed
Preparation
Add dressing to taste
Add extra salt & additional lime juice to taste after adding dressing..

This week I started with a High Protein Tomato Soup Recipe. Its absolutely delish, but if you are looking for something that takes like Campbells or Progresso this is not that. Its thicker, but the flavor is amazing. I want to try it with ricotta cheese the next time. Having with sourdough toast

High Protein Tomato Soup

Ready in 20 minutes
Serves 4 people
Estimated 270-350 calories per serving

Ingredients
1-2 tbsp olive oil
- 8-9 medium sized vine ripe tomatoes
- 1 yellow onion or 2 small shallots, peeled and quartered
- 6 garlic cloves, peeled
- 1 &1/2 tsp salt + additional to taste
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1 tbsp balsamic vinegar
- 1 & 1/2 cups cottage cheese
- 1/2 cup chicken bone broth
Preparation
Preheat oven to 400 degrees and grease or line a large sheet pan with parchment paper.
Add the olive oil, tomatoes, shallots, and garlic to the pan and sprinkle with the salt, black pepper, oregano, basil, and red pepper flakes. Use clean hands to evenly distribute the oil and spices.
Bake for 30-45 minutes, until the tomatoes are very soft. Let cool, then transfer everything from the sheet pan to a blender (if your blender is not big enough, you may need to do two batches).
Add the balsamic vinegar, cottage cheese, and bone broth on top and blend on high speed until completely smooth. Salt to taste.
Pour the soup into bowls and top with fresh basil leaves. Store in the refrigerator for up to four days or the freezer for up to a month.

Then I made one of the Dense bean salads I've fallen in love with recently. This one is a bit spicier and has some coleslaw in it, but still delish. So between the egg bake and the dense bean salad I've got enough food until Saturday

Then chopped up a bunch of veggies for two recipes. The first recipe is a hash brown egg bake that you make in a Bundt pan? I'm not sure where I went wrong but all the stuff filled way more than a Bundt pan even though I thought I was following the recipe. So gonna freeze one

Okay managing to channel my rage and slight despair into actions which helps me have hope. Some of that action is just chores(breakfast, laundry, dishes), but I also got up the addition to our window protest sign. And I continue to work on figuring out how to crochet a protest hat

More night photos. I'm really proud of how well these turned out given its my first time night shooting and I'm a rank amateur

looking between the branches of two trees can see many blue stars on a dark almost black back sky, with just a hint of green which was probably a little bit of the aurora I couldn't see with the naked eye

110 second exposure of the sky over the trees in my back yard. As well as the motion in the stars from just the length of time the focus is slightly blurry. You can also see a red dotted line starting on the right side moving left which was the flashing light of a plane.

Okay! Tried my first attempt at night photography due to the aurora. Unfortunately by the time I managed to get all the settings right I missed the best of the aurora that I've seen tonight(been outside several times) But @reverend-odinson.satan.social got a few photos!! Mine are just sky mostly

So Thanks to @monroecountywidems.bsky.social found out about an #ICEOout Protest in my home county. On a cold windy day with about 36 hours notice the new local Indivisible group got about 40-50 ppl out to make our voices heard! These are just my photos #WisconsinPolitics
