Today’s other culinary project: hot-smoked salmon (220F, ~3.5 hours, delicious… what Ted Peters could be if it wasn’t always a bit dry).
Today - which is quite reasonable, weather-wise in southern Ontario - I’m slow-smoking some salmon, making a custard-berry tart with berries we picked this morning, and I’ve made a potato salad to go with the salmon.
