Cook Around Japan - Osaka: Chef Saito's Homecoming
Dining with the Chef

Chef Saito was born and raised in Osaka. He guides us around its restaurants, cookware stores, and kombu kelp specialty stores, in an introduction to the prefecture's traditional food culture.

Oshizushi with Crab Meat

Ingredients (Serves 3-4)
450 g short-grain rice
600 ml water
1 piece of kombu, 10 cm square

Sushi vinegar:
100 ml rice vinegar
50 g sugar
10 g salt
15 ml mirin

200 g crabmeat
Sugar
Rice vinegar

3 eggs
1 tbsp sugar
2 pinches of salt
2 bunches mitsuba

*Wooden Mold
Dimensions: Approx. 93 × 180 × 50 mm
Inner dimensions: 66 × 153 × 50 mm

Directions
1. Cook rice, and mix in sushi vinegar—made with sugar and vinegar.
2. Season shredded crab meat with sugar and vinegar.
3. Season beaten eggs with sugar and salt, then scramble. Boil mitsuba, and cut to the length of the mold.
4. Fill the mold with layers of rice, egg, and rice again. Cover with bamboo leaf or plastic wrap, and press down.
5. Add toppings, press again, then remove from the mold. Cut to finish.

2 more that have been kicking around. Of these two I find it comforting to see Goji-chan (Godzilla for Westerners) obliterating the fake Doctor and his regime into oblivion. The Dalek Doctor would take too long compared to Goji-chan.

Personally I think it’s a missed opportunity because having the Dalek as The Doctor is a better use of irony than Jesus in this context and meme. Oh well.

There are many dangerous creatures in the natural world that use poison for self-defense or for hunting, such as poisonous snakes, spiders and scorpions. It is said that there are more than 200,000 species of poisonous animal on Earth, each with varying degrees of toxicity. Research is currently underway around the world to make these animal poisons useful to humans. For example, a major feature of biotoxins is that they target particular molecules. This "specificity" can produce different results on different targets. This feature is being applied in the development of drugs with minimal side effects and pesticides that only attack pests. Researchers explore the possibilities of a "treasure trove" of poisons.
