Made an Iowa Skinny sandwich last week and it was damn good

A fried pork tenderloin sandwich called the "Iowa Skinny". It's a breaded pork tenderloin that has been smashed into a 1/4" thickness and fried till golden brown. Served on a potato bun with shredded romaine lettuce and a slice of tomato.

ICE convoy spotted on E Oak street in Old Louisville this morning around 8:45. A large armored truck with back doors open, filled with fascist goons, followed by two tan Ford pickups and a white Chrysler Pacifica with texas plates

An ICE vehicle, the Chrysler Pacifica with Texas licence plates is the preferred vehicle for Jack booted thugs. The minivan is at the end of a 4 vehicle convoy led by an armored truck with half a dozen government Nazis visible due to the back doors being open. This was in Old Louisville 4/27/26 8:45am

We are 4 hours into simmering at this point. 4lbs of Chuck roast chunks tenderizing. The smell is amazing, but I'm not convinced this will win a chili cook-off. I worked for nearly two hours on the prep. I wish I had carrots, onions, maybe some bacon in there. But, I followed a recipe.
