Oh, I missed this request! This is the page with the velveeta-applesauce sandwich but I will give you...Shrimp Rabbit Sandwich! It's one of several variations on Welsh Rarebit/Rabbit. "Serve a generous amount of this hot chees sauce over each portion of shrimps and toast. "

2 cups whole cooked shrimps
1 1/2 tablespoons chopped onion
3 tablespoons butter
1 green pepper
1 pimiento
4 slices toast
1/2 lb. Kraft's "Old English"
1/3 cup milk
1/2 teaspoon worcestershire sauce
Salt, pepper
Heat the shrimps and onion in the butter. Add the green pepper and pimiento cut into thin strips. For each serving cover a slice of tast with the shrimp mixture.
Melt the chees in the top of a double boiler. Add themilk gradually, stirring constantly ntil the sauce is smooth. Add seasonings. Serve a generous amount of this hot chees sauce over each portion of shrimps and toast.
Serves 4.

35 has salads! I will give you an interesting one. This is Cheese Salad Roll! "For tea-time, Cheese Salad Roll takes high honors. Rich with the pleasantly mingled flavors of American cheese, chopped nutmeats and condiments, this unusual salad is an easy one to prepare well ahead of the party"

Cheese Salad Roll
1 lb Kraft American, shredded
1 cup chopped pecans
1/4 cup chopped pimiento
3 hard-coked eggs, chopped
1/2 cup chopped sour pickle
1/2 teaspoon salt

Lettuce
Miracle French Dressing
Combine the shredded cheese, pecans, pimiento, eggs, pickle and salt. Blend thoroughly, then work the mixture like dough. shape into a roll and wrap it in wax paper; chill in the refrigerator 24 hours before serving. Slice, and serve on crisp lettuce, lightly dressed with Miracle French Dressing. Serves 10.

Oh snap! I forgot to include your picture!! Here is what they might look like. I grow increasingly questioning of if 'American Cheese' meant the same thing in 1942 that it does today.

Oh, page 26 is a real humdinger! It has a lot of variations on Welsh Rarebit. Here is Rinktum Ditty. "A party dish as gay as its name." I know it's easy to get distracted but please note the /tablespoon/ of minced onion. A fair few of these recipes have such amazing little spoonfulls of onion.

Rinktum Ditty
1 can condensed tomato soup
1 tablespoon minced onion
2 tablespoons tomato catsup
1/2 lb. Kraft American
1 egg, beaten
Dash of cayenne
Toast triangles
Heat the tomato soup with the onion and catsup. Add this to the chees which has been melted in the top of a double boiler. Blend well. Add the beaten egg and cook slowly in the double boiler, stirring constantly, for 5 minutes. Add a dash of cayenne, and serve on toast triangles. Serves 6 to 8.
A party dish as gay as its name.

You get Cheese Puffs with Spanish Sauce! ...honestly suprised that the Spanish Sauce has a pepper in it.

Cheese Puffs with Spanish Sauce
4 egg whites
1 lb. Kraft American, shredded
1 egg
1 tablespoon water
fine dry crumbs
**
Toast rounds
Spanish sauce (see recipe on p. 23)
Beat the egg whites stiff. Carefully fold in the shredded cheese. form into croquettes and chill in the refrigerator for a half hour Beat the whole egg, and add the water. Roll the croquettes in fine crumbs, dip in the beaten egg, roll in crumbs again, and fry in deep fat heated to 375.
Spread each toast round with hot Spanis Sauce and top each with a hot Cheese Puff. Yield, 10 puffs.

Spanish Sauce
1/2 green pepper, shredded
1 small onion, chopped
2 tablespoons butter
2 cups canned tomatoes
1/2 cup button mushrooms
Salt, pepper
cook the green pepper and onion in the butter 5 minutes. add the tomatoes and simmer sloly until the sauce is the desired consistency. Add the mushrooms, and seasoning to taste. Serves 6.

Oh man that's actually an insert called Helpful Hints for Cheese Cookery. Here's Cheese in the Refrigerator and you could roll a new number if you wish. "Natural chees wedges, or any cheese which are not packaged in special wrappers, should be placed in an oiled silk bag in the refrigerator."

Cheese in the Refrigerator
When part of a package of pasteurized prodess cheese has been cut, keep the unused portion by carefully refolding the wrapper around it, and placing the package i the refrigerator.
Natural chees wedges, or any cheese which are not packaged in special wrappers, should be placed in an oiled silk bag in the refrigerator.

Sunflower Salad! Contains zero sunflower. This page also included 'star salad' and the descriptively and undeceptively named 'pineapple and strawberry salad'

Sunflower Salad
Sliced pineapple
Lettuce
Kraft American, shredded
Currant jelly
Kraft French Dressing
For each serving place a slice of pineapple on crisp lettuce. In the center lightly pile 3 tablespoons of shredded cheese. Garnish with a teaspon of currant jelly; serve with the French dressing.

You get Spinach Ring! It is not a jello spinach ring, it is held together with the power of CHEESE. (Paging @farnes.bsky.social for the mashed potatoes content in this one)

Spinach Ring
3 tablespoons butter
3 tablespoons flour
1 cup milk
1/2 lb. Kraft American, shredded
3 eggs, beaten
1 cup finely chopped cooked spinach
1 1/2 cups soft bread crumbs
Salt, pepper
1 cups hot mashed potatoes
Buttered beets

Make a sauce witht the butter, flour and milk. When thickend and smooth add the shredded cheese. Remove from the fire and stir until the cheese is melted. Add the eggs, thoroughly drained spinach, crumbs, and seasonings to taste. Pour into a buttered 6 1/2 inch ring mold and bake in a moderate oven, 350, 40-50 minutes. Unmold on a serving plate. Fill the center with hot mashed potatoes, and garnish the plate with tiny beats. Serves 8.

1/2 lb Kraft's Velveeta
1/3 cup milk
1 6 1/2 can crab-meat
Toast
Melt the Velveeta in the top of a double boiler. Add the milk gradually, stirring constantly until the sauce is smooth. Add the boned and flaked crabmeat, mix lightly, and cook until well heated. Serve on crisp fresh toast. Serves 4.

Whole wheat breat
Baked beans
Kraft American, shredded
Bacon
Raw carrot sticks
Cucumber ring

Butter the bread lightly. Spread each slice with four heaping tablespoons of baked beans; sprinkle with cheese, and top with a slice of bacon. Put under low broiler heat until the cheese is melted and the bacon is crisp. Garnish each sandwich with carot sticks put through the hole in cucumber ring pickles.

Broiled Tomatoes with Velveeta
8 Broiled tomato halves
1/2 lb. Kraft's Velveeta, cut into 8 lengthwise slices
8 strips broiled bacon
Parsley
One each hot broiled tomato half place a slice of Velveeta. Place under low broiler heat until the Belveeta is melted. Garnish each tomato half with a strip of broiled bacon, and garnish the plate iwth parsley. Serves 8.

"For sharp cheese flavor use Kraft's "Old English" process Cheddar Cheese ... for medium flavor, Kraft American ... for mild flavor, Kraft's cheese food, Velveeta. They may be used interchangably in accordance with individual taste preference. "

Fish fillets Baked In Cheese Sauce
2 tablespoons butter
2 tablespoons flour
1 cup milk
1 cup shredded Kraft's "Old English"
Salt, pepper
1 1/2 lbs. fillet of flounder, perch or haddock
2 tablespoons lemon juice
2 tablespoons finely chopped onion
2 tablespoons finely hcopped celery
2 tablespoons water
Make cream sauce with the butter, flour and milk. When thickened and smooth, add half of the shredded cheese, with salt and pepper to taste.
Cut the fish into individual portions and place them in a shallow baking pan. Add the lemon juice, onion, celery, water, salt and pepper, Bake in ahot oven, 450, 10 minutes. Pour the cheese sauce over the fish, sprinkle witht he remaining shredded cheese, and bak 10 minutes longer in a hot oven, 450. Serves 6.

The book was published by Kraft! They had their own test kitchen and publishing setup, aparently! Kraft, even back in '42, owned Philadelphia Cream Cheese.

You got an appetiser and I was SPOILED for choice. I choose for you, TASTY ROUNDS. It's a canape made from eggs and cheese and a touch of baking powder to puff them up in the oven.

Tasty Rounds
Bread
1/2 lb Kraft American
1/2 teaspoon baking powder
2 eggs
Slice the bread, cut it into 2-inch rounds, and toast them on one side.
Shred the cheese, mix the baking powder into it lightly and add the beaten egg yolks. fold in the stiffly beaten egg whites. Spread this generously on the untoasted sides of the toast rounds. Place under the broiler until the cheese is puffed up. Serve hot. Yield. 40 canapes.

Grape Cluster Salad
Place each pear half, round sid eup on galax leaves. Slightly soften Philadelphia Branc Cream Cheese with milk and spread it over the pear halves. Cut grapes in half, remove the seeds, and cover each pear with grape halves to resemble a bunch of grapes. Place a bit of grape stem, or galax stem, in the large end of each pear. Serve with Kraft French or Miracle French Dressing.

Cheese Dumplings in Tomato Sauce
1 can condensed tomato soup, and
1 cup water
or
2 cups ready to serve tomato soup
salt, pepper
1 cup prepared biscuit flour
3/4 cup shredded Kraft American
1 teaspoon grated onion
1/3 cup milk (about)
Heat the tomato soup, water and seasonins. Lightly mix the bisuit flour, shredded cheese and onion. Add milk to make a soft dough. When the soup is boiling, drop in dumplings from a tablespoon. Cover closely and cook slowly 20 to 25 minutes. Do not uncover during the first 20 minutes. Serves 4.

Ooh, you got a full-colum-er! This is 'Apple Dumplings with Cheese'. "A new-fashioned dish with an old-fashioned charm -- a dessert delicacy family style." You are instructed to shread the Kraft's "Old English" which in its current incarnation is a spread. Good luck!!

2 cups flour
1/2 teaspoon salt
2/3 cup shortening
Cold water
**
2 1/2 cups chopped apples
1/2 cup granulated sugar
1/4 teaspoon nutmeg
2 cups light brown sugar
1 1/4 cups water
4 teaspoons butter
**
1 1/2 cups shredded Kraft's "Old English"
Mix the four and salt. Cut in the shortening. Add water to make a dough. Roll, and cut in 5-inch squares.
Toss together the chopped apples, granulated sugar and nutmeg. Place a generous amount on each square of pastry. Bring the four corners to the center over the apples, and pinch together.
cook the brown sugar and water 2 minutes. Place the dumplings in a shallow baking dish and pour the syrup around them. Place a half-teaspoon of butter on top of each dumpling. Bake in a hot oven, 425, 45 minutes or until done.
Serve hot or cold, sprinkled with the shredded cheese. Serves 8.

Oh no, oh no, oh ABSOLUTELY NO. So I was watching this video Which lead me to the cookbook on the Internet Archive And I was happily paging through celery rings and many recipes using Kraft's Old English but this one took me by surprise.

Did you guys KNOW that Alan Lee illustrated an edition of Rosemary Sutcliffe's 'Black Ships Before Troy'? It's GEORGOUS. I think a fair bit of historical research went into the look too.
