another fun one (water) - it's "impossible" to make a good cup of tea at the top of a mountain because the air pressure is low enough that the boiling point of water goes down to as low as 70 °C (on Everest), which is not hot enough to extract the desirable flavour chemicals from tea leaves (4/5)
here's a fun one though, carbon dioxide's triple point is five times atmospheric pressure, which is why we don't see liquid carbon dioxide on earth, just "dry ice". (3/5) (NB the axes are the other way round here)
yea sometimes - a phase diagram will show what the most stable form of a substance is for a given pressure and temperature. probably most things do have a triple point (red circle) where below that pressure it's just solid and gas, but it's rare to find phase diagrams that go to pressures (1/2)
