Not planning to leave the house until Saturday. But still dealing with a headache.
Fajita Funday! One trick to making gluten free tacos, fajitas or pretty much anything with a tortilla is to put the cheese on the bottom to keep it from disintegrating!
Seventeen years ago, I introduced my cats under the pseudonyms Microcat and Macrocat, and the terms stuck. Microcat is tunneling. Macrocat cannot tunnel.
Taco Tuesday! We decided tacos taste better at the cabin, just like everything else. 🪵🌲🐻🫎
Anyway, we had a great time, and I really can’t recommend going to see him enough if you have the opportunity. And he was nice enough to do a selfie with us after the show. (Hubby just sat there and I actually had to tell him to get in the picture. 🤣)
Made @altonbrown.bsky.social sour cream cheesecake with gluten-free stroopwafel crumbs for the crust. But why must I wait so long for it to cool?! 😭 I will update you tomorrow.
Craving nachos, so whipped up some chicken and black beans nachos.
Waffle Sunday used to be a tradition when the kids were at home. We decided we wanted waffles this weekend, so voila! The one on the left is clotted cream, strawberries, and a touch of maple syrup. The right is chocolate hazelnut spread with bananas, and they both have chopped pecans.
I am experiencing some shock. If I were back in ND, I would be contemplating the foot of snow that would be arriving soon. Instead, I had a nice walk where I saw beautiful flowers blooming.

The best part of making beets is that you can eat the whole plant.
At my previous job, they had a bunch of robot lawn mowers. When they closed the campus for a day because of a planned electrical outage, I ran around campus putting googly eyes and nametags on them. Everyone thought admissions staff had done it. I finally fessed up 2 years later.
I miss being back home and going to the coffee shop and snacking on scotcheroos while working, so I had to make my own scotcheroos.
I wanted some comfort food, so I made some french toast with whipped maple marscapone and baked bread cheese with lingonberries to top it all off. It definitely hit the spot.
“Let me tell you what is coming… The North is determined to preserve this union. They are not an impulsive, fiery people as you are for they live in a colder climate. But when they begin to move a given direction, they move with the steady moment a mighty avalanche.” - Sam Houston, 1861
So very glad we decided not to sell the snowblower when we left ND.
Made stuffed peppers with aloha bell peppers. Never had them before but they’re delicious and very pretty.
While I have been sick, I have been working on this. It’s hard to find time to work on it when spousal unit won’t see me (it’s for him). Anyway, I finished the top blue band in this week. Doesn’t look like much, but it’s about 1500 stitches.
