Made a mushroom-based bacon that was gifted to me. Got a little bit too crispy but honestly, even my picky kid thought it worked well! I am not a huge pork fan so this is more comparable in taste/texture with crisp turkey bacon 🥓. Not bad if you're someone transitioning to vegan/vegetarian I say.

I've needed some time off, so I took it. Especially after getting good news from my doctor, I am indulging in my favorite comfort meal. Instant, ramen, mixed with egg, ground beef (today its leftover taco meat), and cilantro for fiber.
