Rice Waffles

Sift together into a mixing bowl
1¾ cups flour
4 teaspoons baking powder
¼ teaspoon salt 2 tablespoons sugar
Add
2/3 cup cold cooked rice
Mix evenly with a fork. Add 1½ cups milk
1 egg yolk, well beaten
1 tablespoon melted butter or salad oil
Stir thoroughly. Fold in 1 egg white, beaten stiff
Cook on a waffle iron. Makes 6 to 8.

Fruit Punch for Fifty

Boil together 5 minutes
1 cup water
2 cups sugar
Add
1 cup strong hot tea
2 cups Fruit Syrup (below)
1 cup lemon juice
2 cups orange juice
2 cups unsweetened pineapple juice
Let stand 30 minutes. Add
4 quarts ice water
1 cup maraschino cherries
1 quart soda water
Pour over ice in a punch bowl.

Fruit Syrup (for Fruit Punch). Cook a cup of strawberry, raspberry or loganberry jam with a cup of water about 10 minutes, stirring well. Strain.

FRENCH OMELET

4 eggs
½ teaspoon salt
¼ cup water
2 tablespoons butter
Few grains pepper

Beat eggs until mixed but not foamy; stir in seasonings and water.
Melt butter in a heavy skillet and turn mixture into the hot skillet. Cook omelet slowly, pricking and lifting with a fork during cooking period.
Cook until firm to the touch of finger (8 to 10 minutes). The omelet may be cooked entirely on top of the range or put in the oven part of the time to dry the top. Fold omelet, turn onto a hot platter, and serve immediately.
5 servings.

Variations: Serve omelet with hot spinach, bacon, tomato sauce, or
hot broiled fruit such as peaches or apricots.

Mix
½ pint thick sour cream
1 package dried onion soup mix or a small jar of red caviar or 1 cup drained canned minced clams
Stir well, cover, and chill at least 2 hours.

Deviled Ham Díp
Mash together
1 small can deviled ham
2 hard-cooked eggs, chopped
Thin with
Mayonnaise, yogurt or sour cream Season more highly, if you like, with Curry or Worcestershire

EGGS à la GOLDENROD

5 hard cooked eggs
2 cups medium white sauce
5 slices toast, buttered if desired

Have eggs cooked just in time to be ready for use. Then shell eggs and separate whites from yolks; chop the whites coarsely and add to the hot white sauce. Reheat until whites are hot, and pour over hot toast.

Rub the egg yolks through a sieve onto the creamed whites, and serve immediately. 5 servings.

Variation: Put the hard-cooked egg whites through a ricer, combine with white sauce, and pour over toast arranged on a platter. Place a whole egg yolk in the center of each and add a dash of paprika for color.
Garnish platter with a sprig of parsley at each end.

CHEESEBURGERS
Although it is traditional to top hamburger with a piece of cheese, and broil until the cheese melts, we find the following method tastier.
Mix together with a fork:
1 lb. ground beef
½ cup shredded cheddar or Gruyère cheese
2 teaspoons Worcestershire sauce
½ teaspoon salt
(1 clove garlic, pressed)
Sauté or broil as directed in above recipes.

Idea's for adding flavor to Hamburger

About ½ hour before cooking, mix into one pound of ground meat one of the following combinations:

2 teaspoons chili sauce
1 teaspoon ground anchovy or anchovy paste
3 tablespoons sautéed mushrooms
1 tablespoon finely diced stuffed olives or 1 teaspoon capers

or:

¼ teaspoon thyme
1 garlic clove, pressed
1 teaspoon Worcestershire sauce

Or:

2 tablespoons each chopped fresh parsley and chives, or 1 tablespoon grated chopped onions and 1 tablespoon coffee cream

Or:

¼ cup crumbled Roquefort cheese or
cultured sour cream
2 tablespoons chopped chives or green onion tops
A sprinkling of hot pepper sauce
¼ teaspoon dry mustard

A variety of Fish Fillings for sandwhiches

Fish Fillings

Flake any cooked white fish and mix with finely cut celery, pickle or cucumber. Moisten with mayonnaise.

Salmon or Tuna (cooked or canned).
Flake and mix with mayonnaise and chopped cucumber or pickle or finely cut celery.

Sardine. Skin, bone, and mash to a paste.
Mix with chopped hard-cooked egg.
Season with salt, cayenne and a few drops lemon juice. Moisten with olive oil or melted butter.

Shrimp. Mash with a fork and season to taste with French dressing or mayonnaise or both.

Lobster. Chop and season with salad dressing or cayenne, mustard and lemon juice. Spread on lettuce if desired. As a variation, add an equal quantity of chopped hard-cooked egg.

BRAISED BRISKET WITH SWEET-SOUR GRAVY
3Ibs. beef brisket
2 tablespoons butter
3 teaspoons salt
Pepper to suit taste
1 carrot, scraped and sliced
½ cup chopped celery
1 medium onion, sliced
¼ cup vinegar

Cut brisket into 2-inch thick slices. Melt butter and brown meat on both sides; add seasonings, vegetables, and vinegar. Cover tightly and cook at the simmering point for 1½ to 2 hours, or until very tender.
Remove meat to hot platter. If unthickened gravy is desired, skim off excess fat and quickly evaporate liquid remaining in pan by boiling until the required amount remains.

For thickened gravy, see 468.
To intensify
the sweet-sour flavor, add 1 tablespoon vinegar and 1 teaspoon sugar.
5 to 7 servings.

CARAMEL PARFAIT
About 9 Servings

Soak:
1½ teaspoons gelatin in:
½ cup cold water
Prepare:
¾ cup warm Caramelized Sugar 1,
Beat:
2 egg yolks
Beat in slowly:
½ cup sugar
Beat these ingredients until well blended. Add the caramel mixture. Stir in a double boiler over— not in-boiling water until the custard coats the back of a spoon. Stir in the soaked gelatin. Cool.
Add:
2 teaspoons vanilla
Chill until about to set. → Whip until thickened, but not stiff:
2 cups whipping cream
Fold lightly into the custard. Still freeze in a mold or in foil-covered refrigerator trays,
Garnish with:
Toasted slivered almonds

Combine in a pitcher:
¾ cup grapefruit juice
¼ cup lemon juice
½ cup orange juice
1 to 1½ cup sugar
1 cup cracked ice

Frozen Líme Pie

Beat until thick
2 eggs
Beat in
2 cup sugar
Add
½ cup light corn syrup
1 pint cream
¼ cup lime juice
1 teaspoon grated lime peel
Freeze in a refrigerator tray
Beat until fluffy.

Mix
1 cup graham cracker crumbs
½ cup butter, melted
½ cup sugar

Line a refrigerator tray or a pie pan with wax paper.
Spread with half the crumb mixture, pour in the beaten lime mixture, and cover with the remaining crumbs. Freeze.
Serves 6 to 8.

Mix
3 cups orange juice
1 cup lemon juice
1 cup pineapple juice
1 cup raspberry syrup, homemade or canned
1½ cups strong hot tea
Boil 5 minutes
1 cup water

STRAWBERRY SHORTCAKE

1 quart strawberries
1 recipe Shortcake
2⅓ cup sugar, or to suit taste
Melted butter

Wash and hull strawberries and slice or crush them. Mix with the sugar; cover and let stand at least 30 minutes, until juice flows freely.
Meanwhile, mix shortcake dough. Roll thin (about ⅓ inch thick) and cut out with biscuit cutter of desired size. If crusty shortcakes are desired, lay biscuits all out on baking sheet; if less crusty ones are preferred, transfer half of them to baking sheet, brush with melted butter, and lay rest of rounds on top. Bake as directed for Shortcake. To serve, place• one biscuit (or lower. half of biscuit) on serving dish, drizzle with melted butter, and drop a generous spoonful of strawberries and juice over it.
Cover with another biscuit (or top half) and drop more berries and juice over top. Serve immediately, with whipped cream if desired. 5 generous servings.

Variation: Bake plain Sponge Cake (93) in a ring form. Cool and fill center to overflowing with fresh sugared strawberries and pineapple.
Garnish with whole strawberries and whipped cream.

LEMONADE
½ cup freshly squeezed lemon juice
3 cup sugar, or to suit taste About 4 cups ice water

Remove seeds from lemon juice but do not strain. Add sugar and water
and stir quickly until sugar is dissolved. Serve immediately, as the flavor will deteriorate on standing. Amount of water and sugar may both be varied to suit personal taste.

Frozen Rum Cake
Put a thin layer of sponge cake in a refrigerator tray. Sprinkle generously with rum. Cover with a layer of Vanilla, Coffee, or Chocolate Ice Cream. Put another layer of cake on top and sprinkle it with rum. Leave in the refrigerator to become firm. Turn onto a serving dish. Slice and serve with Rum Sauce as made for Babas.
For variety, spread on the top layer chopped nut brittle or macaroon crumbs soaked in rum.

Fresh Fruit Ice Cream

Mix
2 cups thin cream
2 cups prepared fruit (below)
¼ teaspoon salt
Sugar to taste
Freeze until firm. Makes about 1½ quarts.

Banana Ice Cream. Put 2 ripe bananas through a sieve and sprinkle with lemon juice.

Blueberry Ice Cream. Stew 1 quart blueberries until soft. Add 1 cup sugar, mash, strain, and cool.

Peach Ice Cream. Pare, slice, and crush fruit to make 2 cups. Sprinkle with ½ cup sugar. Add lemon juice or almond flavoring if the peaches are too bland.

Raspberry or Strawberry Ice Cream.
Mash 1 quart berries, sprinkle with ½ cup sugar, cover, and let stand at least 20 minutes. Strain to remove the seeds.

FRESH CHERRY PIE
A 9-Inch Double-Crust Pie
Line a pie pan with:
A pie dough, 640-642
Wash, drain and pit:
4 cups fresh sour cherries
Combine, then mix gently with cherries: 23 tablespoons quick-cooking tapioca
1/ cups sugar
(2 drops almond flavoring or
2 tablespoons kirsch)
Let fruit mixture stand 15 minutes.
Preheat oven to 450°
Pour fruit into pie shell and dot with:
2 tablespoons butter
Cover with a well-pricked top or a lattice. Bake 10 minutes at 450°
, then reduce heat to 350° and
bake about 40 minutes longer or until golden brown.

RED RASPBERRY AND COTTAGE CHEESE SALAD

½ pint red raspberries, chilled
1 lb. cottage cheese, chilled
5 tablespoons mayonnaise
Sugar, if desired
Lettuce

Wash raspberries; drain. Combine lightly with cottage cheese, adding a little sugar if desired, to suit taste. Pile lightly on lettuce leaves on individual salad plates, and serve immediately with mayonnaise.

BEET, CHEESE, AND ONION SALAD
2 cups diced cooked beets
2 cup mayonnaise
Lettuce
¾ cup diced cheese
Chopped parsley
1 tablespoon chopped onion (or to suit taste)

Combine beets with cheese, onion and mayonnaise, tossing all together lightly. Serve on lettuce leaves, sprinkling with chopped parsley. For a more tart mixture, the beets may be marinated for an hour or two in a diluted cider vinegar ( ½ cup each cider vinegar & water)

BUTTERSCOTCH MARSHMALLOW PUDDING
1 tablespoon gelatine
3/4 cup sugar
¼ cup cold water
2 egg whites
½ cup boiling water
½ teaspoon vanilla

Soften gelatine in cold water; then dissolve in boiling water. Stir in sugar and cool. Beat egg whites until stiff and fold into cooled gelatine mixture. Add vanilla and chill in refrigerator until set, in an oiled square mold or baking pan. Cut in squares and serve with Butterscotch Sauce. 5 to 6 servings.

BUTTERSCOTCH SAUCE
1½ cups light brown sugar, firmly packed
⅔ cup light corn syrup
⅓ cup water
⅔ cup evaporated milk
Dash salt
½ teaspoon vanilla
½ cup chopped nuts, if desired
¼ cup butter

Put sugar, corn syrup, water and butter into a saucepan and boil to the soft ball stage (236° F.). Cool and beat in the evaporated milk, a little salt, and vanilla. Stir in nuts, if desired. Serve on ice cream, bananas, or any desired pudding. Makes about 2 cups.

Suggestions on adding flavor to your hamburgers.

About ½ hour before cooking, mix into one Pound of ground meat one of the tollowing combinations:
2 teaspoons chili sauce
1 teaspoon ground anchovy or anchovy paste
3 tablespoons sautéed mushrooms
1 tablespoon finely diced stuffed olives or 1 teaspoon capers
Or:
¼ teaspoon thyme
1 garlic clove, pressed
1 teaspoon Worcestershire sauce
Or:
2 tablespoons each chopped fresh parsley and chives, or 1 tablespoon grated chopped onions and 1 tablespoon coffee cream
Or:
¼ cup crumbled Roquefort cheese or
cultured sour cream
2 tablespoons chopped chives or green onion tops
A sprinkling of hot pepper sauce
¼ teaspoon dry mustard

GROUND BEEF IN GRAVY

1 Ib. ground beef (round or chuck)
2 1/2 cups water
1 teaspoon salt
3 tablespoons butter
1 tablespoon grated onion, if desired
Dash black pepper

Brown meat in butter in a hot skillet, with onion if it is used. Add water and seasonings, and simmer, covered, for 30 minutes. Thicken to desired thickness with a flour-water paste.
Serve hot on toast or on mashed or baked potatoes. 5 servings.
