The fun thing about being a scatterbrained vegan is often I plan very balanced, veg-forward meals with tons of nutrients but occasionally I end up with “oops, all wheat” (Panko crusted vital wheat gluten “schnitzel” over durum wheat fregola…the only green in sight is oregano 🫠🌿)
