I swear I'm not throwing shade or gatekeeping, but somebody made Max Miller *entirely* too much knife for a person who's never worked in a professional kitchen.

made a crunchwrap. beef brie and beans

A debatably useful shot of a flour tortilla folded over itself. There's a baked corn tortilla, some seared ground beef, and some sauteed refried beans wrapped inside.

Following along with this, this might be my best batch of chicken stock yet.

Two four quart cambros mostly filled and a 32 ounce glass jar full with cloudy, rich looking chicken stock.

Trying to resurrect this thread accurately, but as part of my #funemployment I'm gonna explore the various whole chickens available around the city to find a favorite. Tonight is Godshall's. Hard to color, definitely water-chilled, but tasty with a clean flavor. A lil squishy, too much moisture.

A whole chicken prepped for an overnight dry brine with kosher salt, black pepper, and baking soda. There's an unfortunate hole torn in one side of the breast skin, it came like that and is a pretty big point off.

The same chicken (spatchcocked) now roasted. The color isn't great, kind of splotchy and uneven. It took forever to get the breast to temp, I think probably because of the water-chilling.

Two bowls, one of simple broiled asparagus with garlic and chardonnay vinegar and the other of flash seared sugar peas with soy sauce and toasted sesame seeds.

A bit colorful plate full of a partially broken down roasted kitchen. It's...pretty tasty! But kind of unremarkable.

My dad and stepmom's church do this little global market jawn every year ahead of Christmas, and less importantly it's actually a wicked good oil, but also this is like year six or seven that she's given us a bottle, and the fact that it's still in production after all of everything means a lot.

Wow I wasn't aware that 30th Street Station kindaaaaaaa sucks right now

The usually glorious interior of 30th Street Station with its sky-high ceiling except right now literally everything is covered in scaffolding and a lot of the seating is gone. There's an automat-like kiosk in the foreground that's supposedly a replacement for the newsstand.
