Healthful bacteria flourish if your diet is rich in fiber from vegetables, fruits, beans, and whole grains. On a meaty diet, degrading animal proteins fill your digestive tract with fermenting amino acids, along with bile acids that your body produces to absorb fats. In this environment, unhealthful bacteria can overgrow, and probiotic pills and yogurt cannot stop them. This happens fast. Harvard researchers tested a plant-based diet and a meat-based diet in volunteers, finding that the two diets could dramatically alter gut bacteria within just five days. The point is that it’s not the sprinkle of probiotics in yogurt (or in supplements) that matters; it’s your overall diet. Healthy gut bacteria thrive in a healthy high-fiber diet while meat and other animal products fuel the growth of unhealthy bacteria.

Dextromethorphan is a popular cough suppressant. It is the active ingredient in many over-the-counter cold and cough remedies, such as NyQuil, Robitussin, Dimetapp, and others. Despite its wide use, it is not effective. In fact, a recent placebo-controlled trial in children showed that those given the medication at night did not cough less, and they actually slept worse because of insomnia induced by the medication. I was taught in medical school that it’s a good thing these cough suppressants don’t work, because if they did people would be in trouble. Cough symptoms are there for a reason: to upwardly mobilize the mucous, dead cells, and virus particles and prevent that mucous from settling down and plugging the airways. If cough suppressants were effective and truly interrupted that cough function, viral illnesses would turn into more prolonged and serious illnesses. Dr. Joel Fuhrman, Super Immunity, Pages 93-94

If you buy packaged grain products, anything labeled on the front with words like “multigrain,” “stone-ground,” “100% wheat,” “cracked wheat,” “seven-grain,” or “bran” is usually not a whole-grain product. They’re trying to distract you from the fact that they’re using refined grains. Here, color may not help. Ingredients like “raisin juice concentrate” are used to darken white bread to make it look healthier. The greatest contributor of sodium to the diet of 20 to 50 year-olds is chicken. The poultry industry routinely injects chicken carcasses with salt water to artificially inflate their weight, yet they can still be labeled as “100% natural”. Consumer Reports found some chickens in grocery stores so pumped full of salt that they had a whopping 840 mg of sodium per serving. A set of Swedish studies followed 100,000 people for two decades and found that more milk was associated with more death. In women, 3 glasses of milk a day was associated with nearly twice the risk of dying prematurely. The medical journal editorial accompanying the study emphasized that “the role of milk in mortality needs to be established definitively now.” Harvard researchers followed more than 200,000 men and women for up to three decades and confirmed the bad news. Milk drinkers live significantly shorter lives. Every half serving more of regular milk a day resulted in a 9% increased risk of dying from cardiovascular disease, an 11% increased risk of dying from cancer, and an 11% increased risk of dying from all causes.

Green veggies, beans, tofu, and sesame seeds contain lots of usable calcium. You retain the calcium better and do not need as much when you don’t consume a diet heavy in animal products, sodium, and sugar. Many green veggies have calcium-absorption rates over 50%, compared with 32% for milk. And since animal protein induces calcium excretion in the urine, the calcium retention from veggies is much higher. Researchers have also found that those who eat the most fruits and veggies have denser bones.

Studies have shown that anywhere from 20 to 60 percent of rheumatoid arthritis cases are linked to diet, and dairy products appear to be the most common trigger. The problem is not dairy fat, and it is not necessarily an allergy in the usual sense of the word. The symptoms are apparently a reaction to dairy proteins, so the payoff comes from avoiding both nonfat and full-fat versions.

Randomized, double-blind, placebo-controlled trials of the amount of lycopene in one tomato a day, found a significant reduction in gingivitis within just one week, as well as an improvement in gum bleeding in chronic periodontitis patients. However, half the dose didn’t help, so it looks like you have to go the whole tomato. Greens and beets have another secret weapon: nitrates. Beyond improving circulation, nitrates seem to also play an important antimicrobial role in saliva, proven in a randomized, double-blind, placebo-controlled clinical trial to alleviate gum inflammation.

Americans have abandoned natural foods such as vegetables, fresh fruits, and other plant foods in favor of a dizzying array of chemically altered, nutrient-deficient Frankenfood substitutes. We are paying for this exchange with an unaffordable, bloated, and unsustainable health care system. Chronic diseases—a direct result of not eating enough natural foods—affect record numbers of Americans. But this is only a part of the problem. Commercial food substitutes contribute to people being more depressed, more violent, less intelligent, and less forgiving.

“High pulp,” “extra pulp,” and “most pulp” orange juices are not significant sources of fiber. It’s all pulp fiction. Studies have found that consuming whole fruits can facilitate weight loss, while drinking fruit juice may promote weight gain. Even children given 100 percent fruit juice as toddlers tend to be at higher risk of becoming overweight. As a result, the American Academy of Pediatrics, the American Heart Association, and the Institute of Medicine have all recommended that fruit juice be restricted and whole fruit be consumed instead. Type 2 diabetes is a serious disease that has reached epic numbers in the United States and worldwide and shows no sign of slowing down. Evidence is mounting that the typical high-protein diet is to blame, and our avoidance of carbs only makes it worse. If we avoided animal protein and instead increased consumption of fruits and veggies, we could substantially prevent and treat most of the type 2 diabetes we encounter (Jenkins, Kendall, et al. 2003; Chandalia, Garg. 2000; Watzl 2008).

The National Cancer Institute recently reported on 337 studies that all showed similar results. Veggies and fruits protect against all types of cancers if consumed in large enough quantities. Hundreds of scientific studies document this. The most common cancers are mostly plant-food-deficiency diseases. Raw veggies have the most powerful anti-cancer properties. More and more children are being identified as overweight or obese, but primarily in countries that follow a Westernized diet. One out of four US children are overweight and one out of six are obese. The likely cause: easy access to high-calorie addictive fast food products that lack the micronutrients that children need. More than half of U.S. children will be obese as adults if current trends continue!

The link between unhealthy foods and heart disease was confirmed in the Harvard Health Professionals Follow-up Study, which showed that if we follow men over time, those making healthier lifestyle choices have a 90 percent drop in heart disease risk, while women making healthier lifestyle choices had a 92 percent drop.

Based on a six-week study of college students, the complexion achieved by eating my Daily Dozen recommendation of nine servings of fruits and vegetables a day was found to be significantly healthier and more attractive looking than that achieved by eating three daily servings. The healthier you eat, the healthier you look. Indeed, studies find that individuals with the lowest fruit and vegetable intake could potentially achieve the most improvement in appearance. A systematic review suggested that isothiocyanates and other natural chemicals in broccoli, Brussels sprouts, cabbage, and other cruciferous vegetables can reduce lung cancer risk. Of 18,000 men studied, those with detectable isothiocyanates in their blood had a 36% lower chance of developing lung cancer compared to those with none. Food sources of these compounds are far preferable to supplements. In fact, beta-carotene taken in doses higher than those which occur naturally in plant foods actually increase cancer risk. Studies show that people who work in slaughtering and processing plants have increased risk of dying from cancer. The most recent, a study of 30,000 poultry workers, found that those who slaughter chickens have about nine times the odds of both pancreatic cancer and liver cancer.What about people who eat chicken? The largest study to ever address that question is the European Prospective Investigation into Cancer and Nutrition (EPIC) study, which followed 477,000 people for about a decade. Researchers found a 72% increased risk of pancreatic cancer for every fifty grams of chicken consumed daily. And that’s not much meat: just about a quarter of a chicken breast.

Plato makes it clear: we shall eat animals only at our own peril. Though it is indeed remarkable that one of the greatest intellectuals in the history of the Western world condemned meat eating almost 2,500 years ago, I find it even more remarkable that few know about this history. Hardly anybody knows, for example, that the father of Western medicine, Hippocrates, advocated diet as the chief way to prevent and treat disease or that the man instrumental in founding the American Cancer Society, Frederick L. Hoffman, knew that diet was the way to prevent and treat disease.
