Double celebration of my son’s birthday & graduation, so I marinated NY strip steaks with fresh rosemary, thyme, tarragon & parsley plus garlic & a touch of balsamic vinegar, then lump charcoal grilled. A lovely Gigondas to pair with it. The meal was finished with a fresh peach pie. 😋

I will say without any modesty, it was this pizza, my embellishment of a white clam pizza from Frank Pepe’s in New Haven, CT. Pepe’s is simply fresh clams, garlic, olive oil & oregano cooked in a coal fired oven. Must taste. I add chorizo, potatoes & shredded Manchego cheese cooked on a pizza stone.

Mea Culpa - I am an ex-chef who doesn't use recipes, but I have attempted to lay out the recipe & process in an easy, detailed manner. Ask if needed.

The egg makes the crust flakier. Reserve a bit of the beaten egg to brush the top crust & also then sprinkle a bit of sugar on top. Bake on a sheet pan to catch any seepage for 1 hour in a 350°F oven. I will elaborate more if needed. #COYS
