Saute a LOT of garlic (2 small bulbs for 4 people) in about 4 T. of olive oil. Add 3ish cups of clam juice. When that cooks down to about 1 cup, add 1 lb. pasta that's almost but not quite fully cooked & 2 bunches of parsley, chopped. Pasta finishes cooking in the clam juice. And it's perfect.
And now comes the secret. You put the clams through the grinder. Making pasta with ground clams means clams in every bite, no rubbery tough parts, and no shells in the bowl. (I know some of you don't mind shells in the bowl but I have always hated that.)
Clean them well, because dirt hides between the mantle (the outer part) and the belly. I use tap water because it's easiest. Some people insist on using clam juice, but since you're adding clam juice to the final dish I think it's fine. I also squeeze out the bellies because they muddy the color.
I am going to tell you how to make perfect clam pasta. There is a secret, which I will tell you. First you have to go clamming, then you steam your clams open in a little white wine or vermouth. Drain the clams. Save the clam juice/wine, of course. 🧵
I have an abundance of shiso (@charlescmann.bsky.social didn't warn us of its colonialists tendencies when he gave us a plant). If you have a shiso-forward dish that you love I want to know about it.
Interesting weight-loss trial for bitter hops extract. Over 24 wks, subjects lost about 4% of body weight - but all was fat mass. They actually gained a bit of muscle mass. Ozempic, it ain't. But WAY better results than any weight-loss supplement I've seen. www.sciencedirect.com/science/arti...

Obesity is ticking down. Can't say for sure it's the drugs, but I think it's a decent hypothesis. Caveat: This is self-reported data news.gallup.com/poll/712157/...
This morning, our driveway was intact. In one day, the excavation company dug the trench, installed the new 1500-gallon tank, connected it to our existing septic, and got the town to inspect and pass the whole system. Giant machines + mad skills FTW
Hey botanysky - does anyone know what these black splotches with exploded backs are on our hickory tree?
As this article admits right up top, weight loss is about burning more calories than you absorb. Nobody - literally NOBODY - believes you can assess either what you're absorbing or what you're burning with perfect accuracy. Lots of things affect both sides of that equation.
Otis's little sister Daisy wanted in, and she brought a huge clam over to me. I gave her 2 littlenecks. Jack and I both left with full baskets. There's no real story here. It was just a lovely day having wholesome outdoor fun with strangers, with no phones and no politics. Happy 4th.
This morning, I went clamming with my friend Bronwyn. Clamming is a big thing on Cape Cod, and there were lots of people there. Families, locals, visitors. The guy next to me said, "There are lots of clams, but they're the big ones." As it happened, I was looking for big ones. ...

I wrote a piece about sugar. I said it's not great, mostly because it encourages overeating. This is an actual e-mail I got this morning. What on earth are we coming to?
5. The obligatory lip-service graf about how it might not be the butter, but other things associated with butter-heavy lifestyles. Ya think? This is the crux of the issue, not a throwaway for the second-to-last paragraph.
2. Later in the piece, it asserts causality absolutely. "Consuming more plant-based oils did lower that particular risk." Risk in question is cardiovascular disease, which brings me to ...
Watching our all-Brazilian crew of Gerald, Ezekiel, and Fabrizio raise the 3 roof beams of our 2-story garage & apartment. Each beam is 24 feet & weighs about 150 pounds They bring it up a ladder and raise it to the apex with no machines. Fabrizio: "I am the machine." Writing sure is a cushy job.
We're taking down our garage, which was probably built in the 1950s. We took a window out and found this teeny tiny book of bible verses, put there by whoever built the building, presumably to somehow bless it. I'm as godless as it's possible to be, but I think I'll put it back when we rebuild.
All I want is to take a nice bird photo but it always turns into "Can you find Mr. & Mrs. Osprey?"
A Little Debbie Oatmeal Creme Pie has: 310 calories 5 g. saturated fat 280 mg salt 23 g added sugar If you're eating a lot of these, it's not the titanium dioxide I'd be concerned about.
I made strawberry-rhubarb bars and the whole pan is sitting on the counter. My husband and I keep taking ever-smaller pieces every time we go in the kitchen. He just called them "Zeno's Strawberry Rhubarb Bars."
Hey stats/methodologist/meta-science friends, I have a question. This shows a graph of serum triglyceride levels, and a second graph of the change in levels, with a claim of statistical significance of the change despite miniscule differences in levels. Legit? pmc.ncbi.nlm.nih.gov/articles/PMC...
