Made a late breakfast.

On a fake wood countertop, sits a blue floral plate and there are various items including a sink which are cropped from the photo. In the center of the plate, are two pieces of toasted sourdough covered in scrambled eggs with generous amounts of chives, freshly grated parmesan cheese and a sprinkle of cayenne pepper. Behind the toast, the handles two utensils, partially obscured by the eggs, are propped up by the edge of the plate at about one o'clock.

Double sausage breakfast sandwich from New Friends, served up at the Highland Farmers' Market. A great combination of flavors and texture, well worth the wait in line.

In a clamshell cardboard container, there is a sandwich with an askew English muffin on top of an over easy egg, melted cheese and two sausage patties with some greenery poking out underneath. Splashes of the house 'special' sauce can be seen here and there.

Ready to do my part by taking the 'high-frequency' bus instead of a ride-share. Let me just check the schedule one more time before I leave... To be sure, I'm lucky in that I have alternatives. Many other transit users are going to be very inconvenienced by this huge gap in service at rush hour.

Well, posted something distasteful so here's a brunch ham and cheese sandwich with a fried egg on top I just made and enjoyed.

On a plate with a blue floral print sits a grilled ham and cheese sandwich with a sunny side up fried egg on top. There are scallions, black pepper and hot sauce on the egg and some melted cheese dripping out from the sandwich. To the right of the sandwich are three cornichons. Behind the sandwich a knife rests on the back edge of the plate. Waiting.

The sandwich has been cut in half. Indeed, half is missing and where it should have sit there is instead a fork. The remaining half of the sandwich reveals a melange of yolk, melted cheddar cheese, scallions and even some hot sauce. There are two cornichons remaining. The knife remains visible in the background.

When in doubt (and lacking bread for toasting) just put your eggs over easy on an open faced quesadilla.

On a blue floral plate are four somewhat overly crisp rasher of thick cut bacon on the left, the tines of a stainless steel fork and then more or less top center on the plate are three eggs cooked sunny side up with generous applications of hot sauce, salt, black pepper and chives. Peaking out from under the eggs, the edge of a butter griddled flour tortilla with melted cheese can be seen.

Made a grilled ham and cheese for a late lunch. It was pretty good.

On a plate with a blue floral print, sit two halves of a grilled ham and cheese sandwich, crispy cheese (in one case on the left hand side melted 'upside-down') and strands of molten cheese highlight the split sandwich. In between the halves ham, chives, whole grain mustard spill out onto the plate.

You can't even order a double scotch and whiskey at an airport Chili's for the cost of a rotisserie chicken! FWIW, I think they've held the price of the chicken pretty steady over the years while local housing just keeps going up and up!

Celebrated the mid-December chill in Houston by making a slow braised bowl of pork and red bean stew with veggies. Just the thing for those dark and brisk days when the temperatures plunge into the low eighties.

Recipe for Sweet Potato Souffle; 350' - 35" + 20"; serves 8-10

Souffle: 3 Cups mashed, roasted sweet potatoes, 1 cup of sugar, 1/2 tsp of salt, 2 eggs - lightly beaten, 1/3 stick of butter melted, 1 cup milk, 1 tsp vanilla (optional, brown the butter, add fresh ground nutmeg)
Topping: 1 cup chopped pecans, 1/3 cup AP flour, 1/2 stick butter, 1 cup brown sugar, (optional: I add some ground cinnamon and ginger but you do you on the pumpkin spices; also optional: 1 cup of shredded coconuts which I have never, ever done). Mix the mashed sweet potatoes, adding each ingredient after mixing) with the sugar, add salt, nutmeg (if using), butter, and milk. Cook potato mixture in a buttered casserole dish at 350 for 20"; combine topping ingredients in the order listed, add to the top of the casserole. Return to over for twenty to twenty-five minutes until the top is nicely browned.
