Today is the first time the stew has been undisturbed (other than stirring it occasionally and adding water so it wouldn't evaporate too much) for longer than 12 hours. I have to say, something about leaving it for that long is unsettling, but it still tastes pretty good (after I salted it a bit).

Day 28: Late night stoupdate bc I have been out and about: yesterday we ate down the last of the pork and this morning I added some braised chuck beef cubes to bring us full circle as we close in on the final days of stew. Lovely. Cannot stress enough the umami power of a couple shiitake mushrooms.

Day 23! Stew lunch again today. Sadly could not repeat yesterday bc i have no more meatballs, but I picked up some smoked pork neck bones for $5 on my last grocery shop and popped one in there last night along with potatoes etc. Very nice! Smoky, savory, still a little tomato-y.

Day 22! This was SO much better than it had any right to be, holy shit. The meatballs got Intensely beefy from cooking in the deep beef broth all night/day, & the broth is a really nuanced delicious tomato broth w little floral basil notes. Would recommend the recipe except it takes 22 days to make
