This is what I get for leaving the garden alone for three days during the summer. (Not pictured: the metric ton of ripe tomatoes already sitting on the counter that I’d harvested before leaving.)

No pic of it plated because I don’t take appetizing food pics, but I finished it with fresh basil and oregano (also from the garden) and it was delicious. Even if no one else ate it 🥲

Same round baking pan as before, now with roasted tomatoes and eggplant. The top veggies have some nice browning.

Is it still the “viral tiktok feta pasta” if I add a bunch of eggplant that I discovered in my garden? I dunno, but I think I’m gonna like it. Garden veggies are finally coming up in large enough quantities for dinner 💪🏾
