Updated ingredients with correct quantities. No you do not need 750 potatoes

6 skin-on, bone-in chicken thighs
60 g roasted pistachio kernels (ideally unsalted, but salted works too
1 garlic clove, peeled
10 g basil or flat-leaf parsley
4 tbsp extra-virgin olive oil
1 tbsp red wine vinegar
1 tbsp runny honey
For the potatoes
750 g small new potatoes, halved if larger
Salt and black pepper
3-4 tbsp extra-virgin olive oil
Juice of ½-1 lemon

I nailed dinner tonight and I’m feeling really proud of myself. The formatting is bad but the recipe is in the alt text ✌️

Ingredients
6 skin-on, bone-in chicken thighs
60 roasted pistachio kernels - (ideally
unsalted, but salted works too)
1 garlic clove - peeled
10 basil or flat-leaf parsley
4 extra-virgin olive oil
1 red wine vinegar
1 runny honey
750 small new potatoes - halved if
larger
Salt and black pepper
Method
Place the potatoes in a large pot and
cover with cold water. Season very
generously with salt (potatoes really
need it!). Cover and bring to the boil.
Reduce the heat and simmer for 10-
15 minutes, or until the potatoes are
tender.
While the potatoes cook, debone the
chicken thighs. Place one of the
thighs skin-side down on a chopping
board.
Use a small, sharp knife to cut along
the bone to expose it, then slide the
3 extra-virgin olive oil
0.5 lemon
knife underneath and cut it out,
keeping close to the bone to avoid
losing meat. Repeat with the rest of
the thighs.
Pat the thighs dry and season them
on both sides with salt. Arrange the
thighs in a single layer, skin-side
down, in a cold, large non-stick or
cast-iron pan.
Set the pan on a medium heat, then
cook , undisturbed, for 12-15
minutes, or until the skin is deeply
golden and releases easily from the
pan. Flip the thighs and cook them
for another three to five minutes, or
until cooked through.
While the chicken cooks, drain the
potatoes and tip them into a large
mixing bowl. Add the extra-virgin
olive oil and lemon juice to taste,
season with salt and pepper and toss
to coat. Set aside to cool slightly.
In a food processor, pulse the
pistachios and garlic until coarsely
chopped. Add the basil or parsley,
extra-virgin olive oil, vinegar and
honey, and blitz to a chunky, pesto-
like sauce (alternatively, you can do
this in a pestle and mortar). Taste,
and season with salt and pepper.
To serve, spoon the pistachio
vinaigrette over the crispy chicken
and serve with the lemony potatoes.

The horse was not ready to hang with strangers but it didn’t seem to mind that we were there.

The horse. It’s a dark brown maybe black horse but the coat isn’t shiny black like movie horses. It also has some white striping but no it’s not a zebra I’m not making a dumb alt text joke. There’s a stripe on its face and one that would outline the saddle if it had one on.

We only hung out for like 15 minutes because we didn’t want to disrupt their evening too much. We had NO idea it was even there. Just that there was a horse in the barn so we wandered over to look at it. Then BAM this lil friend comes right up to us.

Two updates: A limb completed its fall out of the tree while we were outside. It landed perfectly along the walkway and caused no damage or injury. We made friends with a donkey who lived next door.

Big ol dead tree limb. You can’t see it but the main section is over 6” in diameter and stretches back another couple feet. Husband said it was at least 150lbs

A donkey! We were just walking by and it came right up to get gentle pets. The other two (another donkey & a horse) in the background were appropriately wary of strangers.

We rented a stupid nice house in the middle of fancy nowhere and brought the cats so we can avoid our terrible neighbors this weekend Highly recommend doing that.

As we’re barreling toward a weekend of stupid temps (and probably a summer of them) I highly recommend getting a couple of these and tossing them in the freezer if you can. It won’t magically make things cooler but you will be able to handle it easier.
