The smartest thing Tony cooks up is the realization that identity isn’t something you announce across a bar over a cigarette and a beer. Identity clocks in early, scrubs the pans, gets yelled at in three languages, burns its fingers, and shows up again tomorrow. Johnson treats the kitchen like every good kitchen deserves to be treated. It’s loud, profane, exhausting, hilarious, occasionally transcendent, populated by pirates, philosophers, degenerates, and craftsmen who’d never dream of calling themselves artists. By the time the primordial climax rolls around, the movie has slipped the hook without you noticing. You came for the birth of a celebrity. You leave thinking about the cooks you’ve never thanked over the years. That’s a trick worth tipping your hat to.
