I'd like to add that we Swiss love cheese for sure. Our own, the French ones, the Italian ones. Probably the area of the world with the most variety in cheeses. We Swiss have manys specialties of melted (e.g. fondue) or roasted (raclette) cheeses. Image: oven cooked vacherin, a less known recipe
We also use these in Switzerland -- but not for röstis. We also have this, to make "girolles", very thin slices that enroll themselves (if that makes sense?). The ethymology of "girolle" is similar to www.merriam-webster.com/dictionary/g... Name of the cheese: "Tête de Moine", English:"Monk's Head".
