Red Thai curry with smoked tofu, zucchini, bell pepper, chickpeas and onions in coconut milk. Served on rice. My go-to recipe for vegan friends; I think it's nice to have a couple of high effort meals ready for such visitors. :3 (not that I don't also make it just for myself)
