New reaction image in our household just dropped.

Every time i go to order more of WSU's Cougar Gold cheese, i am so delighted/astounded by this warning. Who's ordering this much cheese?? Like, i LOVE cheese. Arguably, it's cheese and carbs keeping me alive on any given day. But i'm not buying hundreds of cans every month! Hats off to you, friend.

Trying to read this book i've had out of the library for almost 2 weeks, but keep getting distracted by the amazing cover.

"As American as Shoofly Pie: The Foodlore and Fakelore of Pennsylvania Dutch Cuisine" by William Woys Weaver. HOOOO BOY, how to describe this cover?? There is (of course) a hex sign in the back, but designed with very patriotic stars and stripes motifs. In the center there's a shoofly pie with a 48-state U.S. flag sticking up out of the middle. Off to the right there's a tin of Pennsylvania Dutch butter mints and on the far left there's a tin of John Cope's corn. In the upper left next to the corn there's a 6-pack of Lancaster Brewing Company's Amish 4-Grain Beer. In the lower right by the butter mints there's a set of 3 figures dressed in classic Amish attire. And, the pièce de résistance, there is a plush groundhog taking a bite out of a soft pretzel. Whew

It has taken years to get to this point, but i can finally use my paper beater at home. 🎊 I still have a lot of dialing in to do with the rest of my setup, but the good news is that i do, still, love papermaking.

This is a modern, soft-sided type of Hollander, which is used for macerating (aka, beating) fibers to prepare them for making paper. The beater is oval-shaped with a large metal contraption on the right side. This is the beating part, which comes down against a metal plate on the bottom. Fiber is forced between the two, which is the action called "beating". The beater itself is green-sided and the cotton fiber (suspended in gallons of water) i was beating is white and contrasts nicely, color-wise, with the green.

OH, HELL YEAH!! The rise could have been a little better and i know some folks like a much more open crumb. But i don't like a bread with huge crumbs, so i'm pretty satisfied. Gonna ask the spouse to make me a fancy little toasted cheese sandwich.
