While reading Sayer’s Five Red Herrings I became obsessed with a Beef Shin Stew recipe found in the book. Could find beef shin but found osso bucco at Costco and winged it a bit based on a Jamie Oliver recipe. It is exactly what I wanted rich and unctuous but still simple.
